WEDDING CHOW CHOW
2 ears sweet corn (or frozen or canned)
5 heirloom tomatoes, chopped
1 cucumber, peeled and chopped
¼ c. chopped red bell pepper
1 c. chopped cabbage
½ c. chopped green onions
3 tsp. red wine vinegar
1 tsp. mustard
½ tsp. agave syrup
2 tsp. sea salt
5 Tbsp. olive oil
Put corn, tomatoes, cucumber, bell pepper, cabbage and green onions in a large bowl. Set aside. Combine vinegar, mustard, agave and sea salt in a small bowl. Whisk in olive oil and add to vegetables. Chill.
